Khanom Krok (ขนมครก)

A popular breakfast snack in Thailand is Khanom Krok, which is a sweet coconut pudding. The main ingredients are coconut milk, rice flour and sugar. It is traditionally cooked on a cast-iron pan on a charcoal fire, thought these days many vendors use a gas burner. The pan is very distinctive with dips in it much like the one used for Takoyaki (see below). Another common utensil is a kettle which is used to pour the batter. The way I like my Khanom Krok is soft on the top and slightly firm below. I also like it piping hot, though be careful it doesn’t burn your mouth. These days you see many variations which include crispy edges and various toppings such as the green part of spring onions, sweetcorn, pumpkin and more. There is also a seafood version called Hoi Tod Khanom Krok. When served, the two halves are put together and put into a container like banana leaves or a foam box.
